Jobben med kraften er enkel, grovkutt grønnsakene, dekk til med vann, kok opp og la det syde forsiktig under lokk i 4 timer. Sil av grønnsakene i et dørslag. Syns du den er for tynn er det bare å koke den ned uten lokk.<br />

Spar kjelene, bruk stavmikseren i en annen beholder!</div>

Selve suppen også ganske så enkel. Spar unna noen biter med sopp før du finhakker sjalottløken og freser den og resten av de grovkuttede kantarellene i en gryte med litt smør. Når soppen og løken er gyllen heller du over ca. 1,5 dl med kraft og lar dette koke rolig i rundt 15 minutter. Ha det over i en annen beholder som tåler stavmikser og kjør dette til du har en jevn og fin blanding. Ha det til bake i gryta og kok det opp med fløte før du smaker til med salt og pepper. Mens dette er på vei opp igjen i temperatur steker du soppen du la til sides med bacon og baconfett til det har blitt sprøtt</div>

Når melka når kokepunktet, heller du den over i eggeblandingen og rører til alt sukkeret er oppløst. Hell blandingen tilbake i kasserollen og kok opp. Visp mens kremen kokes opp. La den koke i 2-3 minutter til den tykner.<br />
Hell kremen i en bolle og sett det til avskjøling. <br />
Ha litt hvetemel på bakebordet og hvelv deigen over.<br />
Kna deigen litt sammen og tilsett litt mer hvetemel dersom den er veldig klissete. Det er imidlertid viktig at den ikke blir for fast. Del deigen i 20 like store deler og kjevle hver del ut til en sirkel som er ca. 10 cm i diameter. Legg en spiseskje med vaniljekrem midt på og brett deigen rundt. Klem den sammen, slik at ikke kremen renner ut under stekingen, og legg den på et bakepapirkledd stekebrett med de sammenbrettede kantene ned. Gjenta med resten. La bollene etterheve i ca. 30 minutter. Sett på stekeovnen på 225 grader.<br />

Skjær juleskinke skiver og legg dem over grønnsakene i

Tilsett vesken i røren vekselvis med hvetemel som er tilsatt bakepulver og vaniljesukker.<br />
Rør til slutt inn appelsinskall.<br />
Kle bunnen av formen med bakepapir og fordel røren jevnt i formen (ca 26 x 36).<br />
Strø hakket sjokolade, eller sjokoladedråpene, på toppen av røren og stek kaken midt i ovnen på 180 °C i 35 minutter. </div>

<strong>Fremgangsmåte:</strong><br />

Legg gelantinplatene i kaldt vann i 5 minutter. Skyll de godt og klem ut vannet. Snitt i vaniljestangene på midten, skrap ut frøene.</h4>

Kok forsiktig opp fløte, sukker, vaniljestangen og innholdet i den. Ta det av platen, ta ut vaniljestangen, og rør inn gelatinen. Hell blandingen i seks små former eller glass. Avkjøl minst 3 timer før servering.</h4>

Ha tinte bringebær, melis og sitronsaft i en foodprocessor, kjør til massen er glatt og sil den.</h4>

Server desserten med litt frisk bærsaus ha gjerne noen friske bær på toppen evt; bjørnebær eller bringebær. Kan lages 1-2 dager før </h4>

3 dl kraft, helst viltkraft<br />
50 g usaltet smør<br />
salt og pepper<br />

<b>Viltkraft:</b><br />
1,5 kg viltbein og avskjær<br />
2 l vann<br />
50 g usaltet smør<br />
1 ss tomatpuré<br />
½ gul løk delt i fire<br />
1 gulrot delt i fire<br />
¼ sellerirot delt i fire<br />
1 persillerot delt i fire<br />
2 kvister timian<br />
2 laurbærblader<br />
1 ss einerbær<br />

Fremgangsmåte:</h4>
Sett stekeovnen på 160 grader.<br />
Fjern sener og hinner fra kjøttstykket. Gni inn timian og pepper.<br />
Brun stykket på alle sider i olje i noen minutter og overfør til en ildfast form. Stek i 16-20 minutter avhengig av tykkelsen på kjøttstykket.<br />
Ta ut kjøttet av ovnen og la det hvile minst 15 minutter før du skjærer det opp i pene skiver.<br />

Du kan selvsagt også steke porsjonsbiffer i pannen. Gi dem gjerne noen minutters ettersteking i ovnen (ved 190 grader) samt den obligatoriske hvilen (5 minutter) før de serveres.<br />
<b></b><br />
<b>Ristet skogsopp:</b><br />
Smelt smør og rist soppen raskt. Dryss over salt og pepper.<br />
<b></b><br />
<b>Pastinakkpuré:</b><br />
Fres sjalottløk i olje. Tilsett pastinakk og vann halvveis opp. Legg på lokk og la småkoke til røttene er møre. Tilsett smør og kjør med stavmikser til en slett puré. Smak til med oregano, salt og pepper.<br />
<b></b><br />
<b>Fjellmandelpotet:</b><br />
Potetene kokes nesten møre. Smelt smør og olje i en panne og stek potetene i blandingen noen <br />
minutter. Dryss over grovt havsalt og litt finkuttet persille og gressløk.<br />
<b></b><br />
<b>Rødvin- og blåbærsaus:</b><br />
Smelt sukker. Tilsett eddik og knust einerbær og kok inn. Tilsett blåbær, rødvin og kraft og la koke uten lokk til halvparten gjenstår. Tilsett kaldt smør og pisk det inn, pass på at sausen ikke koker etter at smøret er i. Smak til med salt og pepper.<br />
<b></b><br />
<b>Viltkraft:</b><br />
Hvis du er så heldig å ha tilgang på viltslakt eller får kjøpt bein hos slakteren, bør du bruke anledningen til å lage viltkraft for resten av vinteren. Selvsagt kan samme oppskriften brukes med oksebein og avskjær for å lage en viltkraft light.<br />
Fres bein og kjøttavskjær i smør. Overfør til en stor gryte eller kjele. Ha på vannet. Kok opp og skum av. Tilsett grønnsakene, tomatpuréen og urtene. La stå og trekke ved svak varme i minst tre timer. Sil den godt og frys ned i passe porsjoner.<br />
